How to Choose the Right Cookie Dropping Machine for Your Production Line

From nozzle count to tray width and output rate, the right cookie dropping machine depends on your daily targets and product variety. Here is what to look for when specifying a servo-controlled depositor.

A cookie dropping machine — also called a cookie depositor or forming machine — places raw dough in consistent shapes and weights onto baking trays or directly onto a travelling oven belt at high speed. Specifying the right model means matching nozzle count, tray width, and control capability to your actual production targets and line configuration.

Nozzle Count Determines Output

The primary specification decision is nozzle count. Alif cookie dropping machines are available from 4 to 12 nozzles. More nozzles deposit more pieces per pass across the tray, directly multiplying output per hour.

Choose nozzle count based on your daily production target and the baking capacity of your oven. A 12-nozzle depositor producing 350 kg/hour is wasted investment if your oven can only process 100 kg/hour. Match the depositor output to your oven throughput, not the other way around.

Tray Width and Line Compatibility

The tray width of the depositor must match the trays used in your rotary rack oven, or the belt width of your travelling oven. Confirm your standard tray size before specifying.

For rack oven operations, the depositor loads trays off-line, which are then manually racked and loaded into the oven. For travelling oven integration, the depositor is synchronised to belt speed and positioned at the oven entrance — confirm this interface with your oven supplier before ordering.

Servo Control and the Touchscreen Interface

All Alif cookie dropping machines use servo-controlled motors — not older mechanical cam-driven systems. Servo control provides consistent dough drop weight and shape with minimal variation between production runs, and allows fine speed adjustments without mechanical changeover.

The 7" TFT touchscreen control panel allows operators to store programmable recipes for each product — drop weight, diameter, spacing, and belt speed — and call them up without manual re-adjustment each shift. This reduces setup time and operator error, particularly in operations running multiple SKUs.

Multi-Layer and Shape Options

Some Alif models support multi-layer depositing for sandwich cookies or filled-centre products, depositing a base layer and a topping layer in a single pass. Shape inserts — round, oval, ring, or custom — can be changed between production runs.

Confirm which shapes are available for your chosen model, and confirm changeover time for shape inserts. In high-SKU operations, fast changeover directly affects productive uptime.
